A blast freezer for chicken 

uses high-powered refrigeration and fans to rapidly freeze poultry, preserving its quality, texture, and nutritional value. By minimizing the size of ice crystals, blast freezing prevents cell damage that can occur with slower freezing methods. 

How a blast freezer works for chicken

  1. Preparation: Freshly processed or cooked chicken is placed in the blast freezer, often on trays or trolleys.
  2. Rapid cooling: Powerful refrigeration systems quickly bring the air temperature down to between -30°C and -45°C (-22°F to -49°F).
  3. Forced air circulation: High-velocity fans circulate the extremely cold air uniformly around the chicken, accelerating the freezing process.
  4. Core temperature reduction: The freezer reduces the core temperature of the chicken to -18°C (0°F) or lower within a short time frame, often a few hours.
  5. Transfer to storage: Once the chicken is fully frozen, it is moved to a standard cold storage room to be held at a stable frozen temperature until distribution.
